4 or 5 apples (McIntosh or Winesap) 3/4 cup sugar (for marinade) 5 teaspoons cinnamon 4 eggs 1-1/2 cups sugar (for cake) 1/2 cup orange juice |
1 cup oil 1/2 - 1 cup chopped walnuts 8 cherries, quartered and a little juice 3 cups Self Rising flour 3 teaspoons vanilla confectioners' sugar |

Peel apples and slice thin. Put apples in separate bowl and sprinkle with a mixture of 3/4 cups sugar and 5 teaspoons cinnamon. Let apples marinate. Preheat oven to 325 degrees. Grease and flour tube pan. Using two separate bowls, mix together remaining dry ingredients in one, and mix together liquid ingredients in the other. Then combine the dry and liquid ingredients together by folding them in with the quartered cherries and nuts. Pour half of the batter in the bottom of prepared pan. Add half of the marinated apples. Add remaining half of batter. Top with other half of apples. Bake at 325 degrees for 1 hour. Let cake sit in pan for about 15 minutes, and invert onto a rack to let cool. Sprinkle with confectioners' sugar. |

To help coat apples more evenly, try putting them in a large Tupperware or even a large plastic bag and tumbling them gently to coat apples evenly. Enjoy :)
